I ran across this recipe in the August issue of  Bon Appetit and thought this would be a fun dessert for our turn to host our small group this week.  I wanted something I could make ahead and that wasn’t too complicated, so I thought this would be the ticket.  You simply bake a big cookie, fill it with ice cream, slice, dip and decorate.  Couldn’t be simpler, right?  Wrong!

The cookie, was easy and tasty, but that was the end of the easy part for me.  Next step was to fill the cookie with the softened ice cream and I was already starting to make a mess, but I completed this step, wrapped it in the plastic wrap as decorated and put it in the freezer to set up.  The recipe says to leave it in the freezer for at least 3 hours.  Unfortunately for impatient me, I only left it in the freezer for about an hour and a half.  The fatal error.  The cookie broke when I tried to cut it and the ice cream started to melt.  I had the presence of mind, to quickly put everything back in the freezer and leave it overnight.

Tonight, I started by cleaning up the bars, by making fresh cuts on the sides to pretty things up, and then very quickly dipped in the chocolate, topping and promptly returned to the freezer.  After about an hour, I took the bars out of the freezer, one at a time, and wrapped the undipped portion first in a piece of parchment and then in foil.  Finally, I put each in an individual freezer bag.

The good news…the tast fabulous!  I hope my company enjoys them.

    I think these look INCREDIBLE. I actually like your photo a lot better than the Bon Appetit photo. Beautiful job. I need one, right now!

    Thanks Cassie! After the wrestling match I had with these silly bars, it is nice to hear.

    I feel your pain. I went through something similar with ice cream bombe cake. Your ice cream sandwiches do look fabulous and worth the trouble.
