I had the bright idea to make a Valentine’s Day cake for my family so I pulled out my favorite cake book, Rose’s Heavenly Cakes by Rose Beranbaum. My original thought was to make a Red Velvet cake, but I was seduced by the Chocolate-Covered Strawberry Cake. I read through the recipe and even though it was extremely complicated, decided it would be a good Sunday project. Five and a half hours later, I was finally able to serve a piece of cake to my family! I only had one minor mishap in the process, when I had to redo my cooked sugar which is included in the strawberry mouseline filling. The end result is not only delicious but also quite impressive. Next Valentine’s Day I will probably opt for the much easier Red Velvet Cake!
