Lemons, lemons, lemons…it seems that they have been on my mind everytime I think about what I would like to cook. So how better to satisfy a lemon craving than with homemade lemon curd? It is not difficult to make and is oh so much better than anything you can find in a jar. Smooth, creamy and just the right amount of tart.
Lemon curd is wonderful as a topping for thumbprint cookies (recipe to follow), with fresh berries and whipped cream, served with angel food cake, spread on muffins, the options are endless. It is also a beautiful hostess gift. Pack into a small mason jar with a ribbon and your friends will love you!
- 1/3 cup freshly squeezed lemon juice
- 3 eggs
- 1 cup sugar
- 1/4 cup unsalted butter, melted
- 1 tablespoon lemon zest
In a double boiler over simmering water, whisk 3 eggs & 1 cup sugar until smooth. Add remaining ingredients and continue to gently whisk mixture until thickened, approximately 15 minutes.
Transfer to medium bowl and cover entire surface with plastic wrap. Be sure to press the plastic wrap right onto the curd or a film will develop. Refrigerate at least one hour.
