Molasses Ginger Cookies

If they gave out awards for “Most Beautiful Cookie”, these would definitely not be in the running, but just one taste and you may change your mind.  They are full of good stuff, including whole wheat flour, molasses & candied ginger and lots of spices.  Try these the next time you are in the mood for a cookie that is not too sweet and they may quickly become one of your favorites.

Molasses Ginger Cookies

  • 1 cup shortening
  • 3/4 cup brown sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 tsps. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. ground cloves
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg
  • 2 cups whole wheat pastry flour
  • 1/4 cup chopped candied ginger

Cream shortening and brown sugar.  Add molasses and egg and incorporate well.  Sift together dry ingredients and add to wet ingredients.  Mix in chopped candied ginger.  Chill until mixture is easier to handle (approx. 1 hour).  Form into 1 inch balls and roll in granulated sugar.  Place on cookie sheet lined with silicone baking mat or parchment and bake at 375 degrees for 8 to 10 minutes.  Do not overcook as they should remain soft.  Cook for 2 minutes on pan and then transfer to wire rack.

Makes approximately 3 dozen cookies.
