This is the wonderful plate of leftover shredded pork from the Pork Ragu Pasta the other night. Nothing better than leftovers that are the launching point for more easy, delicious meals.
The possibilities are endless for and can be adapted to meet your specific preferences, but ours usually come together something like this:
- Shredded Pork
- White Corn Tortillas
- Guacamole with Fresh Corn & Chipotle (recipe coming soon!)
- Sour Cream
- Refried Beans & Cheddar Cheese – for my son
I always warm my tortillas over my gas burner and keep them between two towels or a tortilla keeper until ready to serve so they have a chance to soften up.
Once the tortillas have been prepared and set aside, put the pork into a skillet on medium high with about 1/4 cup watter. Cook until the pork breaks apart and becomes brown and crispy, adding more water as necessary.
Still waiting for the laptop to arrive, so photos are limited right now. In the meantime, just take these ingredients, stir in a little imagination and you will soon have a picture of mouth-watering Shredded Pork Tacos.
