Do you have a smoker? If not, you don’t know what you are missing.
My good friend Ron, gave us his old Cookshack smoker a couple years ago when he upgraded to a more “deluxe” model. I had never had a smoker before and the only thing I thought they were good for was smoked salmon, which I love, but still really couldn’t see the need. My husband, however, thought it sounded like a great idea! Mind you, his cooking skills extend not much further than toast, but he could hardly wait to get started with the smoker.
It has been fun trying out different recipes together and we have made some wonderful jerky, ribs, brisket, chicken, even fish, but by far and away the favorite is the smoked Pork Butt. It is so good, that I have a hard time convincing myself to make anything else when I plan far enough ahead to put together a dry rub, marinate, and smoke all day. That is, until Ron sent me this picture of pastrami he made in the smoker. It literally made my mouth water and I have been dreaming of a pastrami sandwich on homemade bread and all the fixings ever since.
Here is his recipe, which is pretty easy since it starts with corned beef which cuts down on the brining time. Give it a try and your neighbors will be circling your house wondering where that terrific smell is coming from.
