Watermelon, Fig & Goat Cheese SaladI wasn’t sure exactly how to title this salad because it just as easily could have been called “Produce Stand Salad”.  This was simply the result of what was in at the local produce stand combined with a few extras to round it out.  I picked up this lovely watermelon, a small container of perfectly ripe mission figs, the mandatory blueberries  and local raw honey.  When I got home, I plucked some fresh mint from my herb pots, looked in the fridge and found goat cheese and wha la, a salad was born!

This salad is super easy and can be adapted to just about any combination of fruit you have available.  The key is to marinate the watermelon for at least an hour as it really give the salad some pop.  I can already see this becoming my “go-to” summer salad!

    Looks fantastic. Very refreshing and juicy! I haven’t had fresh figs ever since we visited Crimea for a summer vacation… and that was some 5 years ago 🙁 ahh. But at least we have tons of blueberries here 🙂
