Do you like to pack a salad for lunch but hate either having it end up soggy from the dressing or having too many containers? Well then, salad in a jar is the answer for you!
The secret is in the layering. By putting the dressing in first and the greens in last, the salads stays fresh and crisp for days. When you are ready to eat it, simply invert into a bowl and mix it up.
This delicious salad combines crave-able taco flavors with low fat and high protein ingredients. The perfect lunch for a busy day.
I don’t often used packaged dressings or sauces but sometimes you find something so good, it just doesn’t make any sense to make it from scratch. If you haven’t tried the Rick Bayless line of taco sauces for Fronterra Foods, you are missing out. My favorite is the New Mexico Taco Skillet Sauce which perfectly complements ground turkey burger.
This recipe is simply a guide – mix and match ingredients to suit your tastes, just be sure to layer in the order listed to retain the freshness.
Turkey Taco Salad in a Jar
- 1 lb. lean ground turkey
- 1 red bell pepper (or whichever are your favorites)
- 1 can black beans, rinsed and drained
- 1/4 cup feta cheese
- 1 packet Fronterra New Mexico Taco Skillet Sauce
- 1/2 cup salsa of your choice
- 2 tbsps. low fat mayonnaise
- 2 tbsps. Tomato paste
- 1- 2 tbsps. Red Wine Vinegar
- 1 large bag Spring Greens, washed, dried and chopped
- 4 wide mouth quart jars
Begin by browning and breaking up turkey burger until cooked through. Drain off any excess liquid. Add packet of taco sauce and cook through for another 3-4 minutes. Remove from heat and set aside to cool.
While the taco meat is cooling, prepare the dressing by combining the salsa, mayo, and tomato pasted mixing together until well blended. Add the red wine vinegar to taste. I like my dressing on the tart side, so don’t add it all at once.
Now comes the fun part! Begin the layering. Divide the dressing between the 4 jars, carefully spooning it into the bottom. Divide the remaining ingredients between the 4 jars in the following order: chopped peppers, black beans, cooled taco meat, feta cheese. Finally stuff the top with the chopped greens. This is a great way to get extra greens in your diet, so you may want to include kale and/or spinach with your lettuce mix. I tend to pack quite a bit of greens in my jar because I like a big salad. Put the lid on and store in the refrigerator until ready to eat!
Tip: Buy the plastic screw on lids for easy cleaning and packing.
